Lazy Chicken Soup
Chicken soup is one of the most easiest dish you can cook at home. I consider it a no fail dish since it requires minimal work and no technical skills required.
I called my chicken soup recipe a lazy comfort food :D. Sometimes I just want to make something fast and easy comforting food. Chicken soup is always my go to dish especially in a cold weather.
On this recipe I used leftover rotisserie chicken ( nothing goes to waste!) but you can use any kind of meat. Also, I didn't throw the bones right away I made a stock out from it to get the most flavor. I boiled water with the bones for 30 mins then discard the chicken bones. I mix then the stock with good quality canned chicken broth to enhance the flavor. It may sounds like a bit tedious but trust me this extra step is worth it. But then again if you want fast and easy you can just use canned chicken broth. Ok let's start cooking! Below is the recipe for my lazy yet delicious and comforting chicken soup.
